Ingredients
2 lbs russet potatoes, diced
1 lb smoked sausage, sliced into rounds
1 packet ranch seasoning mix
2 cups shredded cheddar cheese (or Colby Jack blend)
3 tbsp olive oil
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp paprika
Fresh parsley, for garnish
Instructions
1. Preheat the oven to 400ยฐF (200ยฐC). Grease a large baking dish or sheet pan.
2. In a large bowl, toss diced potatoes with olive oil, ranch seasoning, garlic powder, paprika, and black pepper until evenly coated.
3. Spread the seasoned potatoes in a single layer on the pan and bake for 25โ30 minutes, stirring halfway, until tender and lightly browned.
4. Add the sliced smoked sausage to the pan, mixing with the potatoes. Bake for another 15 minutes.
5. Remove from the oven and sprinkle the shredded cheese over the top. Return to the oven for 5โ7 minutes, until the cheese melts and bubbles.
6. Garnish with fresh parsley and serve hot.
Notes
You can swap cheddar for Colby Jack or mozzarella for a gooier texture.
For crispier potatoes, avoid overcrowding the pan.
